Instructions:
1. Heat the oven to 180 degrees Celsius and prepare a baking dish.
2. In a bowl, beat the eggs with sugar until a lush and dense mass is obtained.
3. Gradually add the sifted flour to the egg-sahar mixture, gently mixing.
4. Add zest and lemon juice, and then also pour softened butter. Mix until a homogeneous dough is obtained.
5. Pour the dough into the prepared baking dish and send it to the preheated oven for 25-30 minutes, or until the biscuit becomes golden on top and the baking will miss the knife inserted into it.
6. While the biscuit is baking, prepare a lemon cream. Mix condensed milk and lemon juice. Gradually add whipped cream and continue to beat until a thick and light cream is formed.
7. When the biscuit will be ready, remove it from the oven and let it cool. Then cut it in half horizontally.
8. Apply half the lemon cream to the lower layer of the biscuit and carefully distribute it on the surface.
9. Cover with the top layer of the biscuit and apply the remaining lemon cream on top.
10. Serve the “lemon biscuit” cake and decorate with lemon slices or zest as desired.
