Ingredients:
– 200 g of flour
– 150 g of sugar
– 1 teaspoon of baking powder
– a pinch of salt
– 100 ml of vegetable oil
– 150 ml of milk
– 2 eggs
– 1 teaspoon of vanilla extract (optionally)
– 200 g of fresh berries (strawberries, raspberries, blueberries or others to choose from)
Instructions:
1. Previously heat the oven to 180 ° C and prepare the molds for muffins, lubricating them with oil or using paper molds.
2. In a large bowl, mix flour, sugar, baking powder and salt.
3. In another bowl, beat the eggs, add vegetable oil, milk and vanilla extract. Mix well.
4. Mix dry and liquid ingredients together, gently mixing until a homogeneous dough is obtained. Do not grind it too much to avoid an excessive giant structure.
5. Carefully add fresh berries to the dough, gently mix them evenly.
6. Fill the molds for muffins with dough by 2/3 of the volume, leaving a little space for baking.
7. Put the molds with the dough in the preheated oven and bake for about 20-25 minutes, or until the muffins become golden and the inserted toothpick is clean when passing into them.
8. Remove the muffins from the oven and let them cool slightly in the molds before transferring to the lattice for complete cooling.
