
Coconut jelly is a refreshing dessert with a delicate texture and taste of coconut. Its preparation is not difficult, and for this you will need the following ingredients: 1 coconut milk jar, 1 pack of gelatin (10 g), 4 tablespoons of sugar, a pinch of salt, 1 teaspoon of vanilla extract and coconut chips for decoration.
To begin with, in a small bowl, dilute gelatin into 1/4 cup of cold water and leave for 5-10 minutes to swell. Then put a bowl of gelatin in a pan with hot water and stir until the gelatin is completely dissolved.
In another pan, combine coconut milk, sugar and salt. Warm the mixture over medium heat, constantly stirring until the sugar completely dissolves. Do not bring the mixture to a boil.
Remove the pan from the heat and add dissolved gelatin to the coconut mixture. Mix thoroughly so that the gelatin is evenly distributed.
Add vanilla extract and continue to stir until all the ingredients are mixed.
Pour the resulting mixture into molds or glass mugs. Put them in the refrigerator for 2-3 hours so that the jelly freezes.
After cooling, the jelly is ready to serve. If desired, sprinkle it with coconut chips for decoration.
