Ingredients:
– For a biscuit cake:
– 4 eggs
– 120 g of sugar
– 120 g of flour
– 1 teaspoon of baking powder
– For cranberry mousse:
– 300 g of fresh cranberries
– 100 g of sugar
– 200 ml of water
– 10 g of gelatin
– 250 ml of whipping cream
– For cream:
– 250 g of masquearpone
– 50 g of sugar powder
– 100 ml of whipping cream
Preparation:
1. Cook the biscuit cake: beat the eggs with sugar until lush mass is formed. See the flour and baking powder and mix gently. Pour the dough into a baking dish with a diameter of 20 cm, previously lubricated with oil or covered with parchment paper. Bake in a preheated oven at 180 degrees Celsius for about 25-30 minutes. Let the cake completely cool.
2. Prepare the cranberry mousse: In the pan, connect the cranberries, sugar and water. Put on medium heat and bring to a boil. Cook for 5-7 minutes until the cranberries become soft. Remove from heat and wipe the cranberries through a sieve to get mashed potatoes.
3. Dilute gelatin in 50 ml of cold water and leave for 5-10 minutes to swell. Then melt it in a water bath or in a microwave, stirring, until completely dissolved. Add melted gelatin to cranberry mashed potatoes and mix well.
4. Beat the cream for whipping until the peaks are formed. Gradually add cranberry puree and carefully mix to get a homogeneous mass.
5. We collect the cake: Cut the biscuit cake horizontally into two parts. Put one cake on the tray and level the surface. Apply half the cranberry mousse to the cake and smooth it. Put the second cake from above and press so that it is evenly distributed.
