Ingredients:
– 200 g of cookies (about 20 pieces)
– 100 g butter
– 500 g of fresh berries (strawberries, raspberries, blueberries, etc.)
– 150 g of sugar
– 500 ml of whipping cream
– 10 g of gelatin
– 50 ml of water
– 1 lemon (juice and zest)
Steps:
1. Grind the cookies to the state of the crumb. Add molten butter and mix until a homogeneous mass is obtained.
2. Put the resulting mixture in the bottom of the baking shape and tamp evenly. Put in the refrigerator for 15 minutes to solidify.
3. In a blender or puree form, grind the berries to the state of puree. Add half sugar and lemon juice. Mix thoroughly.
4. In a separate bowl, beat the cream for whipping until the peak structure is formed.
5. Damage gelatin in cold water for 5-10 minutes. Then add hot water and mix until completely dissolved.
6. Add the rest of sugar and gelatin to the mixture of berries. Mix thoroughly, then carefully add whipped cream.
7. Pour the resulting berry-hunger mass into the mold on cookies and evenly distribute.
8. Put the cake in the refrigerator for 4-6 hours to solidify.
9. When serving, decorate the cake with fresh berries and the zest of lemon.
