
Cake “Almond Pie with Berries” (Almond Pie with Berries)

This cake combines the tenderness of almonds and freshness of berries, creating the perfect combination of tastes. The cake is based on a fragrant almond dough, which, when baking, acquires a golden hue and a crispy texture. The filling consists of fresh berries that give the cake a bright taste and color. Such a dessert will become a real decoration of any table, and its preparation does not require complicated efforts.
Ingredients:
– 200 g of almonds (chopped)
– 150 g of flour
– 150 g of butter (soft)
– 150 g of sugar
– 3 eggs
– 1 teaspoon of baking powder
– 1 teaspoon of vanilla extract
– 250 g of fresh berries (strawberries, raspberries, blueberries, currants)
Instructions:
1. Pre -heat the oven to 180 degrees Celsius.
2. In a large bowl, mix almonds, flour and baking powder.
3. In another bowl, beat the oil and sugar until a fluffy consistency is obtained.
4. Add whipped eggs one at a time, continuing to whip after each addition.
5. Enter vanilla extract and continue to whip.
6. Gradually add a dry mixture (almonds, flour and baking powder) to a wet mixture (oil, sugar, eggs), gently mixing until a homogeneous dough is obtained.
7. Put the dough in a baking dish with a diameter of 22-24 cm, previously lubricated it with oil or covered with parchment paper.
8. Evenly distribute fresh berries on the surface of the dough, pressing them a little inside.
9. Put the shape in the preheated oven and bake the cake for about 35-40 minutes, or until it acquires a golden color and will not become elastic to the touch.
10. Leave the cake to cool in the form for 10-15 minutes, then carefully transfer it to the grille for complete cooling.
11. Serve the “almond cake with berries” on the table, sprinkling it with fresh berries and, if desired, adding a pinch of sugar for decoration.
