Ingredients:
– 200 g of flour
– 40 g of cocoa powder
– 1 teaspoon of baking powder
– 1/2 teaspoon of soda
– 1/4 teaspoon of salt
– 4 eggs
– 200 g of sugar
– 100 g of butter (molten)
– 200 ml of sour cream
For cherry filler:
– 500 g of frozen cherries without bones
– 100 g of sugar
– 2 tablespoons of starch
For cream:
– 500 ml of cream (with fat content of at least 35%)
– 2 tablespoons
– 1 teaspoon of vanilla extract
For decoration:
– Chocolate shavings
– cherries (fresh or canned)
Instructions:
1. Pre -heat the oven to 180 degrees Celsius. Prepare a baking dish (about 22 cm in diameter), grease it with oil and sprinkle with flour.
2. In a large bowl, mix flour, cocoa powder, baking powder, soda and salt.
3. In another bowl, beat the eggs with sugar until a lush mass is obtained. Add molten butter and sour cream. Mix thoroughly.
4. Gradually add a dry mixture to wet, gently mixing until a homogeneous dough is obtained.
5. Pour the dough into the prepared shape and bake in a preheated oven for about 35-40 minutes or until cooked (check readiness using a toothpick).
6. Leave the biscuit cooling, and then cut it into two flat parts horizontally.
7. For the preparation of cherry filler, put frozen cherries, sugar and starch in a pan. Heat over medium heat, stirring constantly, until the mixture thickens. Leave to cool.
8. For the preparation of the cream, beat the cream, sugar and vanilla extract until a dense texture is obtained.
9. Start collecting the cake, applying a layer of cherry filler to the first biscuit, then add the cream and repeat the layers.
10. Decorate the cake with chocolate chips and fresh cherries.
11. Before serving, save the cake in the refrigerator for the best structure and taste.
