
Recipe for making a carrot biscuit cake:
Ingredients:
– 300 g of flour
– 250 g of sugar
– 4 eggs
– 200 ml of sunflower oil
– 250 g of fresh carrots (purified and grated)
– 1 tsp baking powder
– 1/2 tsp soda
– 1 tsp brown sugar
– 1 tsp vanilla extract
For cream:
– 200 g of cream cheese
– 100 g of cream (35% fat)
– 100 g of sugar powder
– 1 tsp vanilla extract
For decoration:
– finely chopped nuts or coconut chips (optional)
Instructions:
1. Previously heat the oven to 180 ° C. Prepare the baking dish, lubricating it with oil and sprinkling with flour.
2. In a large bowl, mix sugar and eggs. Beat them until a lush and homogeneous mass is formed.
3. Add the sunflower oil gradually, mixing thoroughly.
4. In a separate bowl, mix flour, baking powder and soda. After that, add them to a mixture of eggs, sugar and oil.
5. Enter grated carrots and vanilla extract. Mix all the ingredients well until a homogeneous dough is formed.
6. Pour the resulting dough into the prepared baking shape and level the surface.
7. Bake the cake in the preheated oven for about 35-40 minutes or until cooked (check with a toothpick – if it comes out clean, then the cake is ready).
8. While the cake cools down, prepare the cream. In a bowl, mix cream cheese, powdered sugar, cream and vanilla extract. Beat all the ingredients until the lush cream is formed.
9. Cut the cooled cake in half and apply half the cream to the lower layer. Then carefully cover it with the top layer of the cake.
10. Cover the top and side of the cake with the remaining cream. Garnish with finely chopped nuts or coconut, if you wish.
11. Leave the cake in the refrigerator for several hours so that it is saturated and gained a more rich taste. Then cut and serve.
