
Cake “cheese” is a delicate and fragrant treat that conquers its taste and texture. Here is a recipe for how to prepare this delightful dessert.
Ingredients:
– 250 g of cookies (such as “halo” or other chocolate cookies)
– 100 g butter
– 500 g of soft cottage cheese
– 200 g of sour cream
– 150 g of sugar
– 3 eggs
– 1 lemon (juice and zest)
– 1 teaspoon of vanilla extract
Preparation:
1. Grind the cookies in the crumb. This can be done with a blender or simply putting cookies in a bag and crushing it with a fist.
2. Melt the butter and mix it with cookies until a homogeneous mass is obtained.
3. Cover the baking dish (about 23 cm in diameter) with parchment paper. Put the prepared mixture of cookies and oil on the bottom and side walls of the mold, evenly distributing it over the entire surface. Smell the mixture so that it becomes a dense basis for the cake.
4. Prepare the filling. In a large bowl, mix cottage cheese, sour cream and sugar. Beat this mixture with a mixer to a smooth consistency.
5. Add eggs to the mass of cheese one by one, continuing to whisk. Then add lemon juice and zest, as well as vanilla extract. Continue to beat until a homogeneous state is obtained.
6. Pour the cooked filling on the base of cookies in the form.
7. Heat the oven to 160 degrees Celsius. Bake the cake for 45-50 minutes or until the top becomes golden and rises slightly.
8. After baking, leave the cake in the form for 10-15 minutes, then carefully transfer it to the grille for complete cooal.
9. Cooling cake can be decorated with fresh fruits, berries or chocolate crumbs.
10. Before serving, cool the cake in the refrigerator for at least 4 hours (preferably at night) so that it acquires a denser texture.
