Cake “Chocolate Cake with Pesikov jelly” is an exquisite combination of chocolate biscuit and fresh peach jelly, creating a unique taste and texture. Here is the recipe for how to cook it.
Ingredients:
– For the biscuit:
– 200 g of dark chocolate
– 200 g of butter
– 200 g of sugar
– 4 eggs
– 200 g of wheat flour
– 1 teaspoon of baking powder
– 1/2 teaspoon of soda
– For peach jelly:
– 500 g of ripe peaches
– 100 g of sugar
– 10 g of gelatin
– 100 ml of water
– For glaze:
– 150 g of dark chocolate
– 100 g butter
– for decoration (optional):
– Fresh peaches
– Chocolate shavings
Instructions:
1. Prepare the biscuit: Melt the chocolate and butter in a water bath. In a separate bowl, beat the eggs with sugar until a thick mass is formed. Add melted chocolate and oil, mix. See the flour, baking powder and soda through a sieve and gently intervene in the dough.
2. Pour the dough into a baking dish previously greased with oil and sprinkled with flour. Bake in the oven heated to 180 degrees to 180 degrees for about 30-35 minutes, or until the biscuit becomes elastic and dried. Cool the biscuit on the grill.
3. Prepare peach jelly: clean the peaches from the skin and seeds, cut them into pieces. Pour peaches in a blender until a homogeneous mass is obtained. In a small pan, mix sugar and gelatin, pour water and leave for 5 minutes to swell the gelatin. After that, heat the mixture over low heat, stirring constantly, while gelatin is completely dissolved. Add peach puree to the pan and mix.
4. Put a peach jelly on a cooled biscuit and flatter the surface. Put the cake in the refrigerator for 2-3 hours so that the jelly froze.
5. Prepare the chocolate icing: melt the chocolate and butter in a water bath, constantly stirring, until smooth and brilliant mass.
6. Remove the cake from the refrigerator and gently pour the chocolate icing on top. Flip the surface of the glaze with a spatula or knife
