Ingredients:
– 400 g of candy cookies like “Savoyardi”
– 500 g of fresh strawberry berries
– 250 g of Mascarpone (Italian cheese)
– 200 ml of fresh coffee, chilled
– 100 g of sugar
– 3 egg yolks
– 250 ml of whipping cream
– 1 teaspoon of vanilla extract
– cocoa powder for sprinkling
Instructions:
1. Prepare coffee and let it cool. Then add sugar and mix until completely dissolved.
2. Separate the yolks from proteins. In a large bowl, beat the yolks with a half sugar until thick, lush mass.
3. Add masquearpone to whipped yolks and sugar. Beat thoroughly until a homogeneous and lush cream is obtained.
4. In a separate bowl, beat the cream for whipping with the remaining sugar and vanilla extract until the peaks are formed.
5. Gradually add whipped cream to the cream of masquearpone, gently mixing from the bottom up.
6. Choose a cake shape and start laying it. Dip each cookie in chilled coffee and put on the bottom of the form.
7. Evenly apply half the cooked cream to the cookie layer.
8. Cut the strawberry berries into thin rings and lay them on the cream. Leave a few berries for decoration.
9. Again, make a layer of impregnated cookies, then add the remaining cream and smoothly distribute it.
10. Put the cake in the refrigerator for 4-6 hours (or better for the whole night) so that it is saturated and become more dense.
11. Before serving, sprinkle the cake from above with a thin layer of cocoa powder and decorate with the remaining berries.
