
A carrot cake with cheese cream is a delicious and hearty treat that can be prepared even at home. You will need the following ingredients: for a cake – 3 large carrots (grated), 2 eggs, 200 g of sugar, 150 ml of vegetable oil, 200 g of flour, 1 teaspoon of baking powder, ½ teaspoon of salt, 1 teaspoon of cinnamon; For cream – 300 g of cream cheese, 100 g of cream, 100 g of sugar, 1 teaspoon of vanilla extract.
To begin with, first heat the oven to 180 degrees Celsius. Then, in a large bowl, mix the grated carrots, eggs, sugar and vegetable oil. In a separate bowl, mix flour, baking powder, salt and cinnamon. Gradually add a dry mixture to a bowl of carrots and mix well until a homogeneous dough is obtained.
Pour the dough into a lubricated baking dish and send to the preheated oven for 30-40 minutes, or until cooked. Check the readiness of the cake with a wooden skewer: if there are no pieces of dough with a stuck skewer, then the cake is ready. Take it out of the oven and let it cool completely.
While the cake cools, cook the cream. In a bowl, mix cream cheese, cream, powdered sugar and vanilla extract. Beat all the ingredients together until a smooth and lush consistency is obtained.
When the cake has completely cooled, cut it in half horizontally to get two cakes. Apply half the cream to the lower cake, then carefully lay the second cake on top and cover it with the remaining cream. Decorate the cake as desired using carrot chips or grated carrots.
