
The Mernga chocolate cake is an incredibly tasty and exquisite dessert that combines a fragrant chocolate base and delicate meringue airy cakes. You will need the following ingredients: for the chocolate base – 200 grams of dark chocolate, 150 grams of butter, 200 grams of sugar, 4 eggs, 150 grams of flour, 1 teaspoon of baking powder, a pinch of salt; For merengi – 4 proteins, 200 grams of sugar.
For preparing a chocolate base:
1. Heat the oven to 180 degrees. Prepare a round baking dish (diameter of about 20 centimeters) – grease it with oil or pave it with parchment paper.
2. Melt dark chocolate and butter in a water bath or in a microwave. Give the mixture to cool a bit.
3. In a large bowl, beat the eggs with sugar to lush and homogeneous mass. Add baking powder, salt and mix well.
4. Gradually introduce molten chocolate with butter into the egg mixture, continuing to beat.
5. See the flour and gently mix to avoid lumps.
6. Pour the resulting dough into a prepared form and bake in the oven for about 30-35 minutes or until cooked. Check the readiness by stuck a wooden skewer into the center of the cake: it should go dry or with traces of delicate chocolate cake.
For the preparation of merenga:
1. Beat the proteins in a large and clean bowl until a thick foam is formed.
2. Gradually add sugar, continuing to whisk, until the merenga becomes brilliant and stable.
Cake assembly:
1. Remove the cooled chocolate cake out of the mold and cut it in half horizontally.
2. Apply half of the meringue to the lower layer of the cake and gently flatter.
3. Put the upper layer of the cake on the meringue and gently apply the remaining half of the meringue above and on the sides of the cake, creating beautiful peaks or waves using the back of the spoon.
4. Put the cake in the preheated oven at 160 degrees for 10-15 minutes so that the meringue is slightly browned.
