
The Classic Eclair cake is an exquisite French sweet dish consisting of air custard dough, aromatic cream and glaze. Here is the recipe for this amazing dessert.
Ingredients:
– 150 ml of water
– 75 g of butter
– 125 g of flour
– 4 eggs
For cream:
– 500 ml of milk
– 4 yolks
– 100 g of sugar
– 40 g of flour
– 1 teaspoon of vanilla extract
For glaze:
– 200 g of dark chocolate
– 50 g of cream
Instructions:
1. Heat the oven to 200 ° C. Prepare a baking sheet by covering it with parchment paper.
2. In the pan, connect water and butter, bring to a boil. Then add the flour and carefully mix until a homogeneous dough is formed.
3. Remove the pan from the heat and let the dough cool slightly. Then add the eggs one at a time, whipping each egg into the dough until a full connection.
4. Transfer the obtained dough into a confectionery bag with an eclaire nozzle. Squeeze the strips of dough on parchment paper, making the size of the cakes about 10-12 cm.
5. Put a baking sheet with eclairs in a preheated oven and bake for about 20-25 minutes until they become golden and filled inside.
6. While eclairs cool, prepare the cream. In the pan, mix milk and vanilla extract, heat to almost a boil.
7. In a bowl, beat the yolks with sugar until a thick mixture is formed. Add flour and mix well.
8. Gradually pour hot milk into a mixture of yolks, stirring constantly. Then return everything back to the pan and heat it over medium heat, stirring constantly until the cream thickens.
9. Cool the cream and then fill it with cooled eclairs, inserting the tip of a small knife into the side of the cake and begin to pour the cream.
10. To make glaze, heat the cream almost to a boil and add chopped chocolate. Stir until the chocolate completely melts and the mixture becomes smooth.
11. Cover the tops of the eclairs received by the glaze and let it freeze.
