
Coconut cake is an exquisite and tasty treat that can be prepared relatively easily. You will need the following ingredients: flour (200 g), butter (100 g), sugar (100 g), eggs (2 pcs.), Coconut chips (50 g), salt (pinch), vanilla extract (1 teaspoon) , soda (1/2 teaspoon), confectionery cream (optional).
First, soften the butter at room temperature and mix it with sugar. Add eggs and vanilla extract, gently whipping until a homogeneous mass is obtained. Gradually add flour, soda and a pinch of salt, continuing to whisk until smooth dough is formed.
Then add coconut chips to the dough and mix thoroughly so that it is evenly distributed. Leave the dough for 10-15 minutes so that coconut chips swell.
Pre -heat the oven to 180 degrees Celsius. Form small balls of dough about about a walnut in size and put them on a baking sheet, previously covered with parchment paper. Leave the distance between the cakes about 5 cm, as they will grow a little while baking.
Bake coconut cakes in the oven for about 12-15 minutes until golden. Then remove from the oven and leave to cool on the grate.
Ready cakes can be decorated with confectionery cream or sprinkled with additional coconut. They are great for tea drinking or dessert.
