Ingredients:
– 250 g of cottage cheese
– 3 eggs
– 100 g of sugar
– 100 g butter
– 200 g of flour
– 1 tsp baking powder
– 1 tsp vanilla extract
– Open: raisins, nuts or fruits for decoration
Preparation:
1. In the oven preheated to 180 ° C, prepare the forms for cupcakes, lining them with paper molds.
2. In a bowl, combine cottage cheese, eggs and sugar, mix well until smooth.
3. Add melted and cooled butter to the mass of cottage cheese, eggs and sugar. Mix.
4. Gradually add flour and baking powder to the mixture, continuing to mix to avoid lumps.
5. Add vanilla extract and mix once again so that the ingredients are well combined.
6. Divide the resulting dough into cupcake molds, filling them by about 2/3.
7. Upon desirable add raisins, nuts or pieces of fruit from above for decoration.
8. Put the forms in the preheated oven and bake muffins for about 20-25 minutes, until they become golden from above and when pressed on them will return to their original form.
9. Cupcakes are ready! Let them cool a little before serving.
