Description of the preparation process:
1. Start by preparing the ingredients. Break white chocolate into pieces and place it in a bowl.
2. Add cream to the stewpan and heat them over medium heat until small bubbles appear on the surface. Do not bring to a boil.
3. In a separate bowl, mix the yolks, sugar and vanilla extract. Beat the mass with a whisk until a homogeneous state is obtained.
4. Gradually pour heated cream into a bowl with a yellow mixture, constantly stirring with a whisk.
5. Return the resulting mixture to the stewpan and cook on low heat, stirring constantly until the mixture thickens. Do not bring to a boil.
6. Dilute gelatin in cold water and let it swell for 5-7 minutes.
7. Drain the excess water from the gelatin and add it to the saucepan with a cooled mixture, thoroughly mixing until the gelatin is completely dissolved.
8. Pour the resulting mass into individual portioned molds or into one large shape.
9. Put the mousse in the refrigerator for several hours or, preferably, at night, so that it freezes.
10. When serving, you can decorate jasper mousse with chocolate chips, fresh fruits or berries.
