To prepare a jasper cheesecake, you will need the following ingredients:
– 200 grams of crackers (you can use cookies)
– 100 grams of butter
– 500 grams of cottage cheese
– 200 grams of sugar
– 200 ml of cream (liquid)
– 3 eggs
– 1 lemon (juice and zest)
– 2 tablespoons of starch
– 1 teaspoon of vanilla extract
– food dyes at will (to create the effect of jasper)
To get started, prepare the basis for the cheesecake. Remove the crackers or cookies in the crumb and mix it with melted butter. Put the resulting mixture on the bottom of the baking shape and tamp evenly. Leave the base in the refrigerator for 15-20 minutes so that it froze.
Now let’s move on to cooking the filling. In a large bowl, mix cottage cheese, sugar, cream, eggs, juice and lemon zest, vanilla extract. Gently beat all the ingredients until a homogeneous mass is obtained.
If you want to give a jasper effect, add a small amount of food dye of the color you have chosen to the dough for the filling and mix gently.
Remove the shape from the refrigerator and gently pour the filling onto the prepared base. Distribute it evenly over the entire surface.
Put the shape in the oven to 180 degrees Celsius and bake a cheesecake for 40-50 minutes, or until the top becomes golden and the center does not freeze (to check readiness, enter a knife in the middle of the cheesecake – if it comes out dry, then the cheesecake is ready).
After readiness, leave the cheesecake in the oven on the oven for another 10-15 minutes, and then completely cool at room temperature.
