Ingredients:
– 500 ml of cream
– 200 g of dark chocolate
– 150 g of sugar
– 4 yolks
– 1 teaspoon of vanilla extract
– A pinch of salt
Recipe description:
1. In a small pan, heat the cream over medium heat, but do not bring to a boil.
2. Melt dark chocolate in a water bath or microwave.
3. In a large bowl, mix the yolks, sugar and a pinch of salt. Beat the mixture until a thick and fluffy consistency is obtained.
4. Gradually pour heated cream into the yellow mixture, constantly stirring.
5. Return the resulting mixture back to the pan and cook over medium heat, stirring constantly, until the mixture thickens and is covered with a delicate film on the back of the spoon.
6. Remove the pan from the heat and add molten chocolate and vanilla extract. Mix thoroughly until a homogeneous mass is obtained.
7. Leave the mixture for 15-20 minutes so that it has cooled to room temperature.
8. Then pour the mixture into the ice cream container and place in the freezer for 4-6 hours or until completely freezed.
9. Each hour, get ice cream from the freezer and stir well to prevent the formation of ice crystals and get a more delicate texture.
10. After completely freezing, you can serve jasper chocolate ice cream in horns or portioned glasses.
