Ingredients:
– 4 eggs
– 150 g of sugar
– 100 g of flour
– 30 g of cocoa powder
– 1 teaspoon of baking powder
– 200 ml of cream (liquid)
– 50 g of fresh mint (washed and crushed)
– 200 g of chocolate glaze
Instructions:
1. Heat the oven to 180 degrees Celsius and prepare a rectangular shape in size about 25 x 35 cm, lined with parchment paper.
2. Divide the eggs into yolks and proteins into different bowls. Add half the sugar to the yolks and beat until a thick light yellow mass is obtained.
3. In another bowl, beat the proteins until the peaks are formed and gradually add the remaining half of the sugar, continuing to whip until glossy and dense protein masses.
4. See the flour, cocoa powder and baking powder over a mass of yolks. Mix gently until a homogeneous mixture is formed.
5. Add half the whipped proteins to this mixture and carefully mix to get a homogeneous texture. Then add the remaining whipped proteins and mint leaves, gently mixing so as not to lose volume.
6. Put the dough in the prepared shape and evenly lay it out over the entire surface. Put the shape in the preheated oven and bake the roll for about 15-20 minutes, or until it becomes elastic to the touch.
7. While the roll is baking, prepare the icing. Melt the chocolate icing according to the instructions on the packaging.
8. When the roll is ready, remove it from the oven and cool it a little. Then put it on a clean towel and carefully remove the parchment paper.
9. Lubricate the rolling surface with glaze and gently turn it into a roll using a towel to support. Let the roll cool completely.
