Karamel mousse

Caramel mousse is a delicate and aromatic dessert dish that goes well with various sweets. This recipe will allow you to cook delicious caramel mousse without much effort.
Ingredients:
– 200 g of sugar
– 500 ml of cream (with fat content of at least 30%)
– 4 yolks of eggs
– 2 leaflets of gelatin
– vanilla extract (to taste)
Preparation:
1. Start with the preparation of caramel. Distribute sugar evenly through the pan over medium heat and leave until it is completely melted. Do not mix sugar to avoid the formation of lumps. When sugar becomes golden in color, gently mix it with a spoon until a homogeneous caramel is obtained.
2. Now add cream to caramel and mix thoroughly. Be careful, as the mixture can boil and throw it in contact with caramel. Continue to heat the mixture until caramel completely dissolves in the cream.
3. In a separate bowl, beat the yolks of the eggs until a homogeneous mass is formed. Then gradually pour a hot caramel-yellow mixture into the yolks, constantly stirring. This will help to avoid egg coagulation.
4. Soak the leaflets of gelatin in cold water in accordance with the instructions on the package. After the leaflets become soft, squeeze them and add to the mixture of the cream and eggs. Mix thoroughly so that the gelatin is completely dissolved.
5. Add vanilla extract to taste to give additional aroma and tenderness to the mousse. Mix the ingredients again.
6. Pour the resulting mixture into individual portions or glasses. Cool the mousse in the refrigerator for 4-6 hours so that it froze and acquire the desired consistency.
7. When serving, decorate with caramel mousse chocolate chips, fresh berries or mint leaves.
