– 4 eggs
– 300 ml of cream (with fat content of at least 30%)
– 2 teaspoons of gelatin
– 100 ml of water

1. First, prepare lemon juice: squeeze the juice of 4 lemons and pour it into a bowl.
2. Add sugar to lemon juice and mix well until sugar is completely dissolved.
3. Beat the eggs in a separate bowl until lush foam is formed.
4. Add whipped eggs to a bowl with lemon juice and sugar, gently mixing.
5. Pour cream into a separate bowl and beat them until the peaks are formed.
6. Mix whipped cream with a lemon-vic mixture to get a homogeneous mass.
7. Dissolve gelatin in 100 ml of water and leave for several minutes to swell.
8. Cross the dissolved gelatin over low heat, stirring constantly, until completely dissolved.
9. Add dissolved gelatin to a bowl with lemon juice, sugar and cream, mix well.
10. Pour the resulting mixture into portioned glasses or molds and cool in the refrigerator for at least 4 hours so that the mousse froze.
11. When serving, decorate with lemon mousse lemon zest.
