
Malin Biscuit Cake (Raspberry Sponge Cake)

Ingredients:
– 250 g of flour
– 250 g of sugar
– 6 eggs
– 1 tsp baking powder
– 200 g of fresh maalins
– 300 ml of whipping cream
– 2 tbsp. sugar powder
– 1 tsp vanilla extract
Recipe description:
1. Heat the oven to 180 degrees Celsius. Prepare a round form for baking, glorify it with oil and sprinkle with flour.
2. Beat eggs with sugar in a large bowl until a lush mass is obtained. Add flour and baking powder, carefully mix until smooth.
3. Pour the dough into a prepared shape and send it to the oven for 30-35 minutes, or until a golden crust and readiness of the dough. Check readiness by inserting a wooden skewer into the middle of the cake – it should come out clean.
4. While the biscuit is baking, prepare raspberry mashed potatoes. Separate several berries for decoration and chop the rest in a blender or pass through a sieve to remove the seeds.
5. Beat cream with icing sugar and vanilla extract until peaks are formed.
6. Cut the cooled biscuit horizontally into two layers. Light the first layer of puree raspberries, then evenly apply half the whipped cream. Repeat this process with the second layer.
7. Decorate the cake with fresh raspberries and sprinkle it with powdered sugar to give a spectacular look.
8. Leave the cake in the refrigerator for several hours to strengthen the layers and saturate the taste.
