
Pastel de Nata (Pastel de Nata) is a popular Portuguese treat with delicate cream filling and crispy layered crust. Here is a recipe for how to cook it yourself.
Ingredients:
– 500 g of puff pastry
– 400 ml of cream (with fat content of at least 35%)
– 200 ml of whole milk
– 200 g of sugar
– 6 egg yolks
– 2 tablespoons of flour
– 1 vanilla stick or 1 teaspoon of vanilla extract
– a pinch of salt
– butter to lubricate forms
Instructions:
1. Heat the oven to 220 ° C. Lubricate the molds for cakes with butter.
2. Expand the puff pastry and cut it into round pieces, which should be slightly larger than the size of the shape. Cover the molds with dough, gently pressing it to the bottom and sides.
3. In a bowl, mix cream, milk and vanilla. Bring to a boil over medium heat and remove from the stove.
4. In another bowl, beat the egg yolks, sugar, flour and a pinch of salt until smooth mass is obtained.
5. Gradually add a hot mixture of cream and milk to the egg mass, stirring constantly.
6. Return the mixture to the fire and cook over low heat, constantly stirring until it thickens to the consistency of the pudding. Carefully do not bring to a boil.
7. Remove the mixture from the heat and leave it to cool.
8. Lay the cooled filling into a prepared puff pastry in forms.
9. Put the forms on a baking sheet and place it in a preheated oven. Bake the pies for about 15-20 minutes or until golden color and the formation of crispy crust.
10. When the pies are ready, remove them from the oven and leave to cool a little before serving.
The pastel de Nat can be served both warm and chilled. Sprinkle them with powdered sugar and, if desired, add cinnamon or other spices. Enjoy this magnificent Portuguese dessert!
