1. Prepare fresh strawberries, rinse and remove the stalks. Then cut it into pieces.
2. In a blender or mixer, chop the strawberries until a homogeneous mashed potato is obtained.
3. In a separate bowl, mix 200 ml of cream and 100 grams of powdered sugar. Beat the mixture until peaks are formed.
4. Dilute 10 grams of gelatin in cold water and let it swell for 5-10 minutes.
5. Put a bowl with gelatin in a water bath and heat it, constantly stirring until the gelatin is completely dissolved.
6. Add dissolved gelatin in strawberry puree and mix thoroughly.
7. Cool the resulting mixture to room temperature.
8. After cooling, carefully add whipped cream from pitch 3 in puree with strawberries and slowly mix to maintain the airiness of the mousse.
9. Add 1 teaspoon of vanilla sugar to give aroma and tenderness to the mousse.
10. Pour the resulting mass into portioned glasses or molds and put in the refrigerator for 2-3 hours for complete hardening.
11. When serving, you can decorate mousse with fresh berries or chocolate shavings.
