Preparation steps:
1. Heat the oven to 180 degrees Celsius. Prepare a baking dish and lay a layer of puff pastry in it. Pierce the dough with a fork to avoid lifting it during baking. Then bake the dough in the oven for about 15-20 minutes, until it becomes golden. Cool the dough.
2. In a separate bowl, divide the yolks and egg whites. Beat the yolks with a half sugar until a light and lush mass is formed. Add starch, flour and a pinch of salt, mix thoroughly.
3. In the pan, mix the water, juice and zest of lemon, the remaining half of the sugar and vanilla extract. Heat over medium heat, stirring constantly, until the mixture thickens.
4. Gradually add broken yolks to a pan with a lemon mixture, continuing to stir. Continue to cook the cream until it becomes thick and homogeneous.
5. Remove the pan from the heat and leave the cream for a while so that it cools down. Then gently lay it on the base of puff pastry.
6. Now let’s move on to the preparation of merenga. Beat the proteins of the eggs until peaks are formed. Gradually add sugar, continuing to whisk until the merenga becomes glossy and stable.
7. Put the meringue on the top of the cream with a layer, evenly distribute it on the surface. You can create decorative peaks using the back of the spoon.
8. Put the cake in the preheated oven to 200 degrees Celsius and bake it for about 10-15 minutes, until the Mernga acquires a golden hue.
9. Cool the cake before serving. You can decorate it with lemon slices or zest for an additional effect.
