– 100 g butter
– 400 g of dark chocolate (70% cocoa)
– 300 ml of cream (with fat content of at least 35%)
– 50 g of sugar
– 1 teaspoon of vanilla extract
– 2 tablespoons of strong coffee or espresso
– cocoa powder for sprinkling
Preparation steps:
1. Grind chocolate cookies to the state of the crumb. Add the cream butter and mix until a homogeneous mass is obtained.
2. Lay the resulting mixture into the bottom of a removable shape with a diameter of about 20 cm and evenly compact. Put the shape in the refrigerator for 15-20 minutes so that the base froze.
3. In a pot with a thick bottom, melt dark chocolate over low heat, add cream, sugar and vanilla extract. Constantly stirring, heat the mixture until the chocolate is completely melted and sugar dissolve.
4. Remove from the pan from the heat and enter strong coffee or espresso. Mix until smooth and homogeneous mass.
5. Remove the shape from the refrigerator and gently pour chocolate filling onto the cooled base.
6. Put the cake in the refrigerator for several hours or better for the whole night, so that it completely froze and acquire a truffle consistency.
7. When serving, sprinkle the cocoa cake cocoa-powder for decor.
