Rahat -Lukum is a traditional oriental treat, rich in aromas and a sweet taste. With it, you can please yourself and your loved ones at any holiday or just enjoy the taste any day. Here is a simple recipe for making rakhat-lumber:
Ingredients:
– 2 cups of sugar
– 1 cup of water
– 1/2 cup of starch (you can use potato or corn)
– 1 teaspoon of pink water or rose extract
– 1 teaspoon of lemon juice
– food dye (optional)
– 1 cup of chopped nuts (almonds, pistachios or walnuts)
Instructions:
1. In a large pan, combine sugar and water. Heat over medium heat, constantly stirring until sugar is completely dissolved.
2. Add starch and continue to stir to avoid lumps. Continue to cook over medium heat until the mixture thickens.
3. Reduce the fire to a minimum and add pink water, lemon juice and food coloring (if you use). Mix that all the ingredients are uniformly connected.
4. Add chopped nuts and continue to prepare the mixture over low heat, stirring from time to time, for about 10-15 minutes or until the mixture becomes thick and acquires a homogeneous texture.
5. Cover the rectangular shape or baking sheet and gently lay out the mixture with a uniform layer.
6. Leave the ragul-lumber at room temperature for several hours or until completely solidified.
7. When the mass froze, cut it into cubes or rectangles with a sharp knife, sprinkle with powdered sugar and serve.
