The Yakhont Cupcake is a delightful dessert that combines a delicate vanilla taste and bright icing from the berries. To prepare this cupcake, you will need the following ingredients: 200 g of butter, 200 g of sugar, 4 eggs, 250 g of flour, 1 teaspoon of baking powder, 1 teaspoon of vanilla extract, 100 g of fresh berries (for example, raspberries or blueberries), 200 g condensed milk.
To begin with, first heat the oven to 180 degrees Celsius. Then whip soft butter and sugar in a large bowl until a homogeneous mass is formed. Add the eggs one at a time, continuing to beat after each addition. After that, enter the flour and baking powder, gently mix until the smooth dough is obtained.
After that, add vanilla extract and berries to the dough. Berries can be left whole or chopped with a knife, depending on preferences. Mix thoroughly so that the berries are evenly distributed over the test.
Pour the resulting mixture into a baking dish previously lubricated with oil or covered with baking paper. Calve the surface and send the cupcake to the oven for 40-45 minutes. Check readiness with a wooden skewer – if it comes out dry, then the cupcake is ready.
While the cupcake is baked, you can make a glaze from condensed milk. Just mix condensed milk with berry syrup or puree of berries. You can use the finished berry puree or cook it yourself by just chopping berries in a blender.
When the cupcake is ready and cool a little, remove it from the mold and pour it on top of the berry icing. Distribute it evenly on the surface of the cake to create a bright and appetizing shell. Leave the cupcake for a while so that the glaze froze, and then cut it into portions and serve.
That’s ready! You can enjoy the taste of the yachont cake, which combines a delicate texture and a bright berry filling. This dessert is perfect for tea drinking or evening treats. Bon appetit!
